Milk Chocolate Sardines, Catch of Six

Michel Cluizel's chocolatiers have a talent for mischief. Six milk chocolate sardines, each one molded with improbable detail, wrapped in foil and tucked into a nylon net, look convincingly like the real thing right up until you open one. Inside: 39% milk chocolate, silky and clean, with none of the preservatives or added flavors that would dull it. Made without soy. 

Cluizel holds the distinction of being one of the few chocolatiers in the world to work directly from the cocoa bean rather than from paste or couverture supplied by a third party. Since 1999, they have committed to using only pure cocoa butter, Bourbon vanilla bean, and cane sugar, with no soy lecithin, no added flavors, and no GMOs. In 2012, the manufacture was awarded the Entreprise du Patrimoine Vivant label, a French government certification granted to traditional industries that reconcile artisanship with modern manufacturing while maintaining production in France.
